    Meaning: "Buku Sayisa" translates to "Blessed Valley" in the local language.

    Variety: Local arabica landraces and heirloom cultivars

    BUKU SAYASA

    Buku Sayisa, located in West Guji, is a washing station that specializes in natural processing. Ripe, sorted cherries from farms at an altitude of 2,300 masl are dried for 12 to 15 days on raised beds. By meticulously avoiding overfermentation during the drying process, Buku Sayisa producers craft elegant cup profiles like this G1 coffee with flavor notes of blueberry, honeydew, and jasmine honeysuckle, resulting in a sweet and sugary taste.

    The Oromo people of the Guji region have their own unique origin story for the discovery of coffee, reflecting its deep cultural significance. According to their legend, instead of Kaldi the goat herder, the Oromo sky god Waaqa wept over the wrongful death of a loyal servant, and his tears brought forth a new plant from the earth. Since as early as the 10th century, coffee has been revered in Oromo culture as a special plant, with beans mixed with fats to provide energy on long journeys.

     

    Centuries later, Guji farmers continue to follow traditional growing methods that enhance the region’s fertile soil. Many indigenous coffee varieties still thrive on Ethiopia’s coffee farms. Coffee is typically intercropped with maize, barley, wheat, beans, and other crops that sustain the farmers' families.

     

    HOW TO BREW

    For French Press

    1. Measure 35g (7 tbsp) coffee, coarse (like breadcrumbs).
    2. Add coffee and 520g (2 cups) hot water (200°F) to press. Stir gently.
    3. Steep for 4 min, then press plunger down slowly.
    4. Pour and enjoy.

    HOW TO BREW

    For Espresso

    1. Measure 18-20g of finely ground coffee (like powdered sugar).
    2. Tamp grounds firmly into portafilter.
    3. Lock portafilter into machine, start extraction.
    4. Aim for 25-30 secs for about 30g espresso.
    5. Serve and savor.

    HOW TO BREW

    For An AeroPress

    1. Measure 15-17g (2-3 tbsp) coffee, medium-fine (like table salt).
    2. Insert rinsed paper filter into cap, attach to AeroPress, and add grounds.
    3. Add 200g (¾ cup) hot water (175°F/80°C), stir for 10 sec.
    4. Insert plunger, press gently, and enjoy.

    For Drip Coffee

    1. Measure 50-55g (10 tbsp) of medium ground coffee (like sand).
    2. Add grounds to a filter in the chamber.
    3. Fill the reservoir with enough water.
    4. Fire up the machine, kick back and enjoy.

    HOW TO BREW

    For Chemex or Pour Over

    1. Measure 25-30g (3-4 tbsp) coffee, medium-coarse (like sea salt).
    2. Rinse filter with hot water, discard rinse water, and add grounds.
    3. Pour 60g hot water (200°F/93°C) to bloom for 30 seconds.
    4. Slowly pour water in circles to 450g total.
    5. Let it drip, then serve and enjoy.

    Orders are shipped via Standard Ground and typically arrive in 2 to 7 business days. Orders are typically dispatched within 24 hours (unless it's a powder day in which case - you get it).

    If you're local, or visiting town, pickup can be arranged from our Roastery Cafe (23698 US Highway 24, Minturn CO) typically within 24 hours. Just make sure you select that option at checkout.
